Other people must have had the same complaint, since the newly released iTunes 7.6 has settings for syncing "least recent" videos. Yay!

iTunes 7.6 also fixed a nasty bug that would cause Smart Playlists created with a "Video Kind" rule to fail – sometimes horribly.
